The Midget White Turkey is a rare heritage turkey that we are committed to preserving and carrying on. The Midget White was developed in the 1960’s to be the perfect homestead turkey, finishing out at 8-12 pounds. The quality of meat is superb, known for tenderness and generous breast for their size.

We have added another heritage breed, the Black Spanish Turkey. The Black turkey originated in Europe as a direct descendant of the Mexican turkeys carried home with explorers in the 1500s. After being selected for meat production for more than two centuries, the Black Spanish turkey made the voyage back to the Americas with early European colonists. The standard weight is 23 pounds for young toms and 14 pounds for young hens.

Both breeds are slow growing, maturing at 6 - 7 months versus the typical 12-14 weeks for commercial turkeys. Our turkeys live a free range life with plenty of space and ground to be happy turkeys.

We humanely process and air chill following processing. Each bird is then brined for 24 hours. Finished turkeys will be ready as a fresh bird (never frozen) by Wednesday, November 27. Our brining ingredients are water, white wine, onions, salt, thyme, bay leaves, juniper berries, black peppercorns, and mustard seeds. We have been using the same recipe since 2005, it’s that good!

We understand our prices are not affordable for every one and we wish they were. Our prices reflect the cost of hatching and raising each bird with the best feed, care, and love we can provide every day for the 6 -7 months they are with us. We feed only non-GMO feed and our birds have never been medicated.

The general rule of thumb is 1–1½ pounds turkey per person but you should bump it up to 2 pounds per person if you’d like left overs.

Our turkeys are $15.00 a pound - please do the math for the entire weight of the bird before ordering. They range from $120 (8lb) - $240 (16lb). You will be billed the remaining balance on Tuesday when we schedule your Wednesday pickup time (no shipping). Taxes apply.
